Grilled Hearts of Romaine
Yes, this is grilled, and it's as fun to make as it is to eat.
Ingredients:
- 1 whole heart of romaine
- Olive oil
- Balsamic vinegar
- 6 slices crispy bacon, crumbled
- 3 tablespoons Parmesan cheese, shredded
Preparation:
- Heat grill side to 6.
- Slice a thin slice off the core end of the romaine, just to clean it up a bit
- Cut lengthways down the middle of the romaine, making two equal halves.
- Brush each half with olive oil and place cut side down on grill.
- Grill a few minutes, just until leaves begin to wilt and edges start to get a tiny bit brown. Turn and repeat.
- Remove from grill and put on plate.
- Drizzle each half with balsamic vinegar and a little more oil - then sprinkle with bacon and cheese.
- Season with a little Kosher salt and fresh ground pepper to taste.
Serves 2. To serve more, just double or triple as necessary.
