Grilled Lox & Fontina

Your basic grilled cheese, but better....

Ingredients:

  • 8 slices some kind of whole grain bread, you can use whatever you like or have - but a multi-grain will just add more flavor and isn't that was this is all about?
  • 4-5 ounces lox (thinly sliced smoked salmon)
  • 8 slices Fontina cheese
  • Butter

Preparation:

  • Heat griddle side to 6.
  • Place a slice of cheese, lox and then cheese again between 2 slices of bread and close.
  • Butter one side of the bread well and place face down on the heated griddle.
  • Squish down a little to flatten a bit while it's cooking.
  • When it's done, butter the top and flip - repeat cooking until nicely brown.
  • Remove and cut into wedges to serve.
  • Repeat until all the sandwiches are cooked.

Makes 4 sandwiches
