Broccoli and Cheese Soup

A delicious creamy favorite.

Yield: Serves 2.

1 cup low-fat milk
1 cup soft tofu
1/2 cup vegetable broth
2 cups chopped broccoli
2 cups low-fat cheddar cheese
- Salt and pepper, to taste

Put milk, tofu and vegetable broth into blender and blend until tofu is creamy. Add broccoli and pulse until broccoli is finely chopped. Transfer to pot and place on medium-low heat, making sure not to burn the milk. Once soup begins to simmer, slowly add in cheese, stirring regularly until cheese is melted. Add salt and pepper, to taste. Remove from heat and serve. For thicker soup, let stand before serving.
