Broiled Eggplant

An excellent side that's easy to make.

1 eggplant, split lengthwise

Wash eggplant and puncture skin with table fork around surface about 6 to 8 times. Broil, using the low rack, at 475 degrees F for 15 minutes, turning once after 6 to 7 minutes. Turbo-broiled eggplant retains nutrients and juice while cooking evenly. The skin is easily peeled and the pulp is not discolored.
