Bruschetta

Transforms bread from bland pre-meal filler to exciting appetizer thriller.

Yield: Serves 4.

1 small tomato, diced
1/4 cup diced onion
3 tablespoons olive oil
1 small garlic clove
1 tablespoon basil
1 tablespoon lemon zest
- Bread (sliced into triangles)
- Pinch salt
- Pinch pepper

In a bowl add diced tomato, onion, lemon zest and olive oil. Using a garlic press, smash garlic into bowl. Finely chop basil and add to bowl. Add salt and pepper, to taste. Set in refrigerator for at least 1 hour.

Just before serving toast the bread on the grill and add a tablespoon portion of tomato mixture on each triangle.
