Butterscotch Topping

The perfect compliment for home-made ice cream.

1 cup sugar
1/2 cup water
1 1/2 cups heavy cream
3 tablespoons butter

Combine sugar and water in medium saucepan. Cook over high heat until mixture is a light golden brown. Remove from heat. Stir in cream until smooth. Add butter, 1 tablespoon at a time, and blend well. Store covered in refrigerator.
