Eggplant Spread

Like caviar, but affordable.

Yield: 1 1/2 cups.

7-9 Indian eggplants or 2 small regular eggplants
1 1/2 bell peppers
1 medium sweet onion, peeled
2 cloves garlic
- Olive oil
- Salt and pepper, to taste

Cut stems off of eggplants. Cut eggplants, bell pepper, and onion in half. Place all ingredients, including garlic, on a flat pan. Drizzle liberally with olive oil. Sprinkle with salt and pepper. Bake at 400 degrees F for 15-20 minutes, or until vegetables are soft. Remove from oven and let cool. Remove skin from bell pepper. Add eggplant, bell pepper, sweet onion and garlic in blender and pulse until vegetables are well mixed. Salt and pepper to taste.
