Hot Pastrami Wrap

A deli classic, updated for quick and easy cooking.

Yield: Serves 6.

1 pound pastrami, thinly sliced
6 large flour wraps or tortillas
2 1/2 cups coleslaw, pre-made- the kind with the carrots, etc.
1 1/2 tablespoons adobe sauce (from a can of chipotle chilies)
12 thin slices Muenster cheese

Mix coleslaw and adobe sauce, set aside. Heat griddle side to 6. Add pastrami to griddle, the idea is to lightly grill it to bring out the flavor. It's a good idea to grill a wrap's-worth of pastrami at a time so you can melt cheese individually. Once grilled, add 2 slices of cheese to each pile. Warm wraps slightly on griddle. Remove and add pastrami/cheese. Place some coleslaw on top, and roll up.
