Vegetarian Soup

Ditch the can for an authentic taste that's easy to make.

2 tablespoons peanut oil
6 cups water
1 small cabbage
1 tablespoon soy sauce
1/2 cup carrots
1 teaspoon sherry
3 celery stalks
1 teaspoon salt
1 scallion
- Dash pepper

Cut the cabbage, carrots, celery and scallion into strips. Heat the oil in the pot, add the vegetables and stir-fry until they begin to soften – about 2-3 minutes. Add the water, soy sauce, sherry, salt, pepper and vegetables to the cooking pot. Cook at 250ºF to 275ºF for two hours.
