Mole Kissed Chicken Cacciatore Stew
This rich stew mixes the taste of Chicken Cacciatore with Chicken Mole for a wonderful and filling main dish.

4 - thawed, boneless, skinless chicken breast cut into small pieces 1 - Medium red onion, diced 1/2 cup - Diced celery 1/4 cup - Diced Green Bell Peppers 1/4 cup - Diced Red Bell Peppers 2 cups - Italian Spaghetti Sauce 1 and 1/2 cups - Chicken Broth 1 Tbsp - Unsweetened Cocoa Powder 1 Tbsp - Chili Powder 2 tsp - Fresh, Chopped Parsley 2 tsp - Fresh, Minced Garlic 1 tsp - Cumin Salt and Pepper to taste
Place chicken breast pieces in the slow cooker. Slow cooker must be at least 2.5 qts big. Add onion, celery and bell peppers to the chicken.
In a medium bowl, mix the spaghetti sauce, chicken broth, cocoa powder, chili powder, parsley, garlic, cumin, salt, and pepper together. Pour sauce into slow cooker.
Cover the slow cooker with lid and turn on to low. Let stew cook 7-8 hours. When finished, stir well and garnish with peanuts, grated parmesan, chopped cilantro or a slice of lemon. Add some cooked rice when done cooking if you want extra thick stew.
