Pasta and Beans Puttanesca

Easy, pantry-shelf main dish

2 anchovies
2 cloves garlic, minced
dash red pepper flakes
2 tablespoons olive oil
one 15-oz can cannellini or white beans
1/2 cup sliced black olives
one 15-oz can petite diced tomatoes
2 tablespoons tomato paste
2 1/2 cups chicken broth
8 oz mini penne pasta
Parmesan cheese to serve

Preheat Aroma rice cooker. Add anchovies, garlic, red pepper flakes and olive oil. Simmer, mashing anchovies, until anchovies are melted (about 3-4 minutes.) Add remaining ingredients (except Parmesan cheese) stir gently, cover and cook until pasta is done.
Serve topped with Parmesan cheese, if desired.
