One Pan Chicken & ZucchiniLow-fat dish with chicken breast, zucchini and tomato all in one pan. Prep: 15 min. Total: 60 min. 3 chicken breast cut in half Using the counter top electric skillet, fry chopped bacon until mostly cooked. Remove cooked bacon from skillet. Add chicken breast halves seasoned with salt, pepper and oregano. Brown on both sides about 1-2 minutes on each side, remove from pan to paper towel to drain. Remove and discard all but 1 Tbsp. bacon grease. Add onion and saute 3-4 minutes. Add garlic to onion and saute 1 minute. Deglaze pan with white wine and add cooked bacon, zucchini and stewed tomatoes. Bring mix to a simmer and adjust seasoning to taste. Add chicken breast back to pan, nestling into mix, cover and let simmer 35-45 minutes. Serve 1-2 chicken pieces with veggies and hard rolls. |
