Mango Coconut Rice Pudding

This is an easy dessert that you prepare in your Aroma Rice Cooker. It is great to serve after a meal of Thai food.

Prep: 10 min. Total: 40 min.

1 1/2 cups raw jasmine rice
1/2 cup packed brown sugar
2 1/2 cups light coconut milk
1 teaspoon ground ginger
1 teaspoon vanilla extract
1/2 cup diced, dried mango

Stir all ingredients together in the rice cooker, and use the setting for white rice. When the timer goes off, stir the mixture before serving. Serve hot or chill for two hours. Optional garnish: shredded coconut and/or crushed pistachios.
