Crab Sushi Salad

Crab sushi roll flavored rice salad.

Prep: 15 min. Total: 30 min.

1 1/2 c sushi rice
1 3/4 c water
2 tbsp unseasoned rice wine vinegar
1 tbsp lime juice
1 tbsp + 1 tsp sugar
1 tsp salt
8 nori strips sliced into strips
1/4 c packed cilantro leaves
1 jalapeno pepper seeded and finely diced
1/4 c diced yellow bell pepper
2 green onions sliced
1/4 c shredded carrot
1/3 c sliced radishes
2 c imitation crab chopped into bite size pieces
1 avocado diced
1/2 tsp toasted sesame seeds

Rinse and drain sushi rice until water runs clear. Place sushi rice and water in rice cooker and cook according to directions.
Combine vinegar, lime juice, sugar and salt into small saucepan and cook over low heat, stirring until sugar and salt dissolve. Remove from heat and let cool.
Place rice in glass serving bowl, slowly pour in vinegar mixture and gently fold in. Let cool, then toss with nori, cilantro leaves, jalapeno pepper, bell pepper, shredded carrot, radishes, green onion, crab, avocado and sesame seeds.
