Spicy Chicken Jambalaya Balls

A combination of hot wings and Jambalaya served as an appetizer.

Prep: 15 min. Total: 30 min. Yield: 12 balls.

1 tablespoon olive oil
1 pound ground chicken
1/2 cup chopped onion
2 cloves garlic, minced
6 green onions, chopped
1/4 cup chicken broth
2 cups cooked long grain white rice
1/2 cup chopped celery
2 tablespoons hot sauce
2 eggs
1 1/2 cups seasoned bead crumbs
Vegetable oil for frying

Sauce
3/4 cup mayonnaise
1/4 cup sour cream
1/2 cup crumbled blue cheese

Heat oil and brown the chicken. Add onions, garlic and green onions. Cook until tender. Add remaining broth and cook 5 more minutes until most moisture has cooked off. Mix rice with chicken mixture and cool. Add celery, hot sauce and 1 beaten egg. Form rice mixture into 1 1/4 inch diameter balls. Mix remaining egg with a bit of water and roll rice ball. Coat in bread crumbs. Heat oil in deep fryer to 350 degrees. Fry until golden brown, 1 1/2-2 minutes. Serve with sauce made by mixing mayonnaise, sour cream and blue cheese together.
