Spicy Chicken Jambalaya BallsA combination of hot wings and Jambalaya served as an appetizer. Prep: 15 min. Total: 30 min. Yield: 12 balls. 1 tablespoon olive oil Heat oil and brown the chicken. Add onions, garlic and green onions. Cook until tender. Add remaining broth and cook 5 more minutes until most moisture has cooked off. Mix rice with chicken mixture and cool. Add celery, hot sauce and 1 beaten egg. Form rice mixture into 1 1/4 inch diameter balls. Mix remaining egg with a bit of water and roll rice ball. Coat in bread crumbs. Heat oil in deep fryer to 350 degrees. Fry until golden brown, 1 1/2-2 minutes. Serve with sauce made by mixing mayonnaise, sour cream and blue cheese together. |
