Chile Verde Chicken 'n' Rice

Green salsa,chicken, corn and red pepper make for a colorful and tasty dish

Prep: 15 min. Total: 45 min.

1 cup US grown long grain rice
1 jar( 12 ounces) green salsa
1/2 cup frozen yellow corn kernels,thawed
1/4 cup roasted red bell pepper strips
1 cup shredded roast chicken meat
1 1/4 cups chicken broth
1/4 cup snipped cilantro
1 green onion, minced
garnish- pumpkin seeds

Place the rice and remaining ingredients, except the cilantro and onion, in the inner pot of an Aroma 6 Cup Cool Touch Digital Rice Cooker. Close the lid and cook on White Rice Mode. When Keep Warm Mode appears open the cooker and quickly stir. Recover and let stand 8 minutes before serving. Top each serving with onion and cilantro, then garnish with pumpkin seeds.
