Lemon Dill Rice

An excellent side for chicken and fish dishes.

Prep: 5 min Total: 30 min Yield: Serves 4

Ingredients

1 cup Mahatma® or Carolina® White Rice

1 3/4 cups water

1/2 tsp salt

zest of 1 lemon

1 tblsp lemon juice

1/2 tsp dried dill

1 tsp dried parsley or 1 tblsp fresh flat-leaf parsley, minced

2 tblsp butter, cut into 4 pieces

salt and pepper

Add all ingredients to the inner pot and stir to combine. Set to White Rice or press the Cook switch and cook until rice cooker switches to Keep-Warm. Let sit for 10 minutes. Adjust seasoning as desired and serve immediately.
