No Sugar Added Strawberry Ice Cream

A great dessert without the guilt.


3 cups evaporated whole milk

2 cups heavy cream

1 1/2 cups whole milk

1 cup instant non-fat dry milk

4 tablespoons honey

1 1/2 cups Splenda®

1 cup cold water

2 teaspoons gelatin

4 tablespoons cornstarch

4 cups crushed fresh strawberries

In a large bowl, combine evaporated milk, cream, whole milk, non-fat dry milk, honey and Splenda®. Stir well with a wire whisk and place off to the side. In a smaller microwave-safe bowl, stir together cornstarch and gelatin until no lumps are visible. Microwave gelatin and cornstarch mixture on high for about 2 minutes, stirring every 30 seconds until a thick clear gel forms.

If clear gel does not form, start over and try using less heat and stirring more frequently. Slowly add 1/4 cup of the milk mixture to the gelatin and stir well. Pour into remaining milk mixture and mix well. No visible lumps should be present. Mix crushed strawberries into the mixture. Place into mixing canister and follow directions in the "How to Use" section of your user's manual. Do not fill the mixing canister more than 2/3 full, as the mixture will expand during freezing.
