Non-Dairy Vanilla Ice Cream

An ice cream parlor classic made right at home-without the dairy.


8 teaspoons gelatin

1 cup apple juice

1 cup honey

13 cups vanilla soy milk

8 teaspoons vanilla

Mix gelatin and apple juice together in a small bowl and stir occasionally until gelatin is dissolved (about 10 minutes). In a medium saucepan, whisk honey and 2 cups soy milk together until hot, stirring frequently. Remove from heat once mixture is hot. Stir in gelatin mixture. Add vanilla and remaining soy milk, stir. Chill completely.

Remove from refrigerator. Pour into mixing canister and follow directions in the "How to Use" section of your user's manual. Do not fill the mixing canister more than 2/3 full, as the mixture will expand during freezing.
