San Antonio Rice

Add a Southwest kick to your rice.

Prep: 5 min Total: 30 min Yield: Serves 3 to 4

Ingredients

1 cup white rice

1 12-oz jar fresh salsa, mild or hot

1 tblsp vegetable oil

1 cup fresh or canned corn kernels

1/2 tsp ground cumin

1/2 tsp salt

pepper

1 1/4 cups water

fresh cilantro, minced

Add all ingredients, except cilantro, to the inner pot. Stir together and set to White Rice. When rice cooker switches to Keep-Warm, open the cooker, stir and re-close the lid. Let stand for 8-10 minutes before serving. Garnish with fresh cilantro and serve.

This recipe is delicious and if you add cooked and cubed chicken thighs and/or breasts even chorizo sausage and mix with the other ingredients, add a green salad and corn bread you have a great one dish meal.

San Antonio Rice is SO GOOD! I sometimes add red beans or cooked chicken or shredded cheese--it is also delicious fixed exactly like the recipe.

Delicious! I added black beans instead of the corn. Its a well loved rice-bean dish called "Gayopinto" (from Central America) or "Casamiento" (from Mexico). Its a great side dish to enchiladas or tacos. Depending how spicy you want it, add spicy or mild salsa.
