San Antonio Rice
Add a Southwest kick to your rice.
Prep: 5 min Total: 30 min Yield: Serves 3 to 4
1 cup white rice
1 12-oz jar fresh salsa, mild or hot
1 tblsp vegetable oil
1 cup fresh or canned corn kernels
1/2 tsp ground cumin
1/2 tsp salt
1 1/4 cups water
fresh cilantro, minced
Add all ingredients, except cilantro, to the inner pot. Stir together and set to White Rice. When rice cooker switches to Keep-Warm, open the cooker, stir and re-close the lid. Let stand for 8-10 minutes before serving. Garnish with fresh cilantro and serve.
