Summer Spanish Chicken

Its an indoor grill, so feel free to make it in the winter too.

Yield: Serves 4


1 5-pound chicken, cut into pieces

1/4 cup canola oil

2 cloves garlic, minced

1 teaspoon fresh lemon juice

1 teaspoon grated orange rind

2 bay leaves

1/2 cup vinegar

1 cup white wine

1 cup chicken broth

- Dash of salt and pepper

Wash and dry chicken. Heat oil on the grill. Brown the chicken over medium heat. In a small bowl, mix remaining ingredients. Top chicken with mixture. Place lid on grill and simmer over low heat for about 45 minutes, adding more chicken broth if necessary to keep chicken covered.
