A very soft and moist carrot pudding.
Prep: 20 min Total: 2.5 hours Yield: 8
1/3 cup shortening
1 cup sugar
1 cup grated carrots
1 cup grated apple
1 cup flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1 cup raisin
Combine all ingredients. Place batter in 1-2qt. baking dish and cover with foil. Open lid, using caution to avoid escaping steam. Fill inner pot with water. Place dish inside the inner pot. Cook 2 hours.
Open lid, using caution. Lift pan out carefully. Move to a rack to cool.
