Sis's Veggie Minestrone

This is a vegetarian meal that is healthy and great on a cold winter night.

Prep: 10 min Total: 12 hours Yield: 14

Ingredients

4 Cups Vegetable Broth

4 Cups Tomato Juice

1 Tablespoon Dried Basil (I grow my own herbs but you can find these in the spice section of your store)

1/2 Teaspoon Salt (I use sea salt to cook with)

1/2 Teaspoon Dried Oregano

1/2 Teaspoon Pepper

3 Medium Carrots Home-Grown

3 Medium Celery Stalks, chopped

2 Medium Onions, chopped

1 Cup Fresh Mushrooms, sliced

3 Garlic Cloves, finely chopped

28 Ounces Diced Tomatoes, do not drain (I also grow tomatoes so most all of ingredients come from my garden)

1 1/2 Cups Uncooked Pasta (I like Rotini)

Mix all Ingredients in slow cooker- except for pasta and cheese. Cover and cook on Low setting 8 to 9 hours or until veggies are tender. Stir in pasta. Cook on high for 30 minutes or until pasta is done. Sprinkle each dish with Parmesan cheese.
