Slow Cooker Parsnip & Apple Stew

A slow cooker vegetable soup, left chunky like stew instead of its traditional pureed.

Prep: 15 min Total: 4 hours Yield: 4


1 small onion finely chopped

2 cups parsnips peeled and finely chopped

1 cup carrot peeled and thinly sliced

2 granny smith apples cored and finely chopped

2 tsp fresh rosemary

1/2 tsp salt

1/4 tsp ground black pepper

2 14oz cans vegetable broth

2 c water

2 tsp apple cider vinegar

Combine all ingredients in slow cooker, except apple, and stir well. Turn on high and cook for 4 hours. During last hour of cook time stir in apple.
