Wild Rice with Caramelized Onions

A wonderful side dish that's full of flavor.

Prep: 60 min Total: 3 hours Yield: 6-8 servings


2 Tblsp. butter

1 cup uncooked wild rice (washed three times)

1/2 cup ground almonds

1/2 pound sliced mushrooms

3 cups chicken stock, heated

Melt butter in skillet at medium heat. Add rice, almonds and mushrooms. Saute for 5 min. Put into buttered bowl of rice cooker. Pour chicken stock over all. Set rice cooker to brown rice setting and proceed to start cooking cycle.

To caramelize onions:
While rice is cooking, saute 3 large, thinly sliced onions for 20 min. at
low to medium heat, covered. Stir occasionally. Add 1/2 tsp. brown sugar and 1/2 tsp. kosher salt and continue to cook, uncovered, for another 20 min., until onions become caramelized (golden,
medium brown in color. Only stir on occasion. Too frequent stirring will prevent caramelization. When rice cooker has finished cooking, let stand 20 min. and then fold in the caramelized onions. The flavor is wonderful.

Times are only estimates. This is a wonderful dish, because it can be prepped ahead and held on the warm cycle of the rice cooker. Prep time appears long due to caramelizing process, but you can be doing other kitchen prep, while supervising the onions.
