Pineapple Rice Pudding

A delicious, guilt-free dessert for any occasion.

Total: 50 minutes Yield: Serves 4-6


1 3/4 cups vanilla-flavored Rice Dream non-dairy beverage

1 1/4 cups water

pinch salt

3/4 cup jasmine rice

1/3 cup sugar

4 oz egg substitute

1 tsp vanilla extract

1 8-oz can crushed pineapple with juice

optional: 1 tblsp dark rum

Pour 1 cup of Rice Dream and the water into the inner pot. Press White Rice and allow mixture to come to a boil. Stir in salt and rice. Cover and let simmer for 30 minutes.


In a small bowl, whisk together remaining 3/4 cup Rice Dream, sugar, egg substitute and vanilla. Stir pineapple with juice into rice cooker. Stir in egg mixture and rum. Let cook, stirring frequently, until mixture simmers and thickens. Pudding will thicken somewhat as it cools. Serve warm or cold.
