Hot Apple & Steel-Cut Oats Breakfast
A breakfast classic with a fresh-and-fruity twist.
Total: 35 minutes Yield: Serves 6
2 cups apple juice
2 cups water
1 cup Irish steel-cut oats
3/4 cup dried apples, apricots, peaches or a mixture, diced
1 tblsp brown sugar
1 tblsp butter
1/4 tsp cinnamon
dash nutmeg, freshly grated
1/4 tsp salt
1 tblsp lemon juice
optional: milk and extra brown sugar
Place the inner pot into the rice cooker. Pour juice and water into the inner pot and press White Rice. Stir in oats, apples, brown sugar, butter, cinnamon, nutmeg and salt. Let simmer uncovered for 25 to 30 minutes. Add lemon juice, ladle into cereal bowls and serve with milk and more sugar, if desired.
