Parsley Mashed Potatoes

4 large russet potatoes, peeled or unpeeled

1 cup sour cream

4 tbls butter

2 cups vegetable broth

1/4 cup choped parsley

salt to taste

Place potatoes and broth in your Aroma Pressure Cooker and set on Low Pressure for 20 minutes.

When done, mash potatoes with broth.

Add butter, sour cream and parsley. Season with salt.
