Hot & Sour Tofu (Vegan and Gluten Free)
14 oz extra firm tofu, drained and cubed
2 tbsp brown sugar dissolved in 1/3 c hot water
1/3 cup gluten free soy sauce
3 tbsp rice vinegar
1 tsp fresh minced ginger
½ tsp red pepper flakes
2 tsp sesame oil
Drain the tofu on several layers of paper towels. Meanwhile, in the inner pot of the MiAroma, dissolve the brown sugar in the hot water. Stir in the soy sauce, rice vinegar, minced ginger, red pepper flakes and sesame oil. Cut the drained tofu into ½ “cubes and add them to the marinade, gently turning each piece so it is evenly coated. Soak the tofu for at least twenty minutes. The longer it marinates, the more flavorful it will be. When ready to cook, lock the lid and cook for 6-7 minutes. Serve over rice, in a noodle bowl or as a sandwich filling.
