This will allow the wood to expand and prevent the saltwater mixture from leaking out during the freezing process.
Home-made ice cream traditionally has the consistency of a thick milkshake. If you prefer a thicker consistency, try the following;
1. Remove the dasher and place the lid and lid cap on the canister. Place the canister in the freezer so it may harden.
2. Leave the canister in the wooden bucket. Remove the dasher and add more ice and rock salt to the bucket. Cover with a towel and let sit until the ice cream is firm.
The dasher will remain still while just the canister rotates when using the electric motor. When using the hand crank, the dasher and canister will both rotate in opposite directions.
For best results, chill the inner canister in the freezer for 24 hours before using it.
